Cross meal-planning off your to-do list this week.
It's that end-of-the-school-year crunch time at my house. We're busy with lots of events and obligations that make getting dinner on the table even harder than usual. But, we still have to eat! To make my (and your) evenings easier, I selected five extra-simple dinner recipes this week, including a slow-cooker fave and a bright, satisfying salad. And, since a cocktail just might be in order, I included a bonus Jalapeño-Mint Margarita. Cheers! | | | | | | Lemony Chopped Salad with Pita | Tangy marinated chickpeas, toasted pita bread croutons, and a jamboree of fresh veggies—crunchy cucumbers, spicy radishes, and sweet cherry tomatoes—come together in this salad that proves that more is more. Salty cheese ties the flavors together, while a sprinkle of mint at the end brings welcome freshness to every bite. | | | | | | Slow-Cooker Birria Bowls | In this weeknight rendition of the Mexican classic birria, pieces of boneless chuck roast are slow-cooked with canned tomatoes and chipotle chiles in adobo sauce until the meat is melt-in-your-mouth tender. A helping of rice, a showering of cheese, and creamy avocado make this meal a weeknight winner. | | | | | | Sicilian-Inspired Pasta with Sardines | If you're on the tinned fish train (so on-trend!), this recipe is for you. Briny anchovies give the sauce major umami, and sardines add loads of protein. Serve the meal warm for dinner, and take leftovers to work the next day to eat cold or at room temperature, pasta salad-style. | | | | | Crispy Chicken Cutlets with Artichoke Dressing | Unlike most chicken cutlets which require frying in oil on the stove-top, these cook on a sheet-pan in the oven for maximum convenience. But, the real draw in this recipe is the bright, easy-prep sauce: chopped jarred artichokes tossed with Parm, parsley, olive oil, and lemon. Delish! | | | | | Italian Sausage Burgers | Using sausage instead of ground meat is a genius shortcut for big burger flavor. Quick-pickled red onion, sliced Provolone, and store-bought roasted red peppers bring even more oomph to the party. Round it all out with frozen fries or sweet potato fries. | | | | | | Jalapeño-Mint Margaritas | Bookmark this one for your Memorial Day BBQ. A perfect balance of sweet and spicy, this cocktail will go down easy with whatever is cooking on the grill. | | | | | |
