Cross meal-planning off your to-do list this week.
I'm not sure when this recipe first ran in REAL SIMPLE, but I was definitely making it before I started working here four years ago. It's a riff on the Japanese street food okonomiyaki. And while you might not think that a mixture of cabbage, flour, eggs, and seasonings would be super-delicious, I promise that it is–especially when topped by one or two simple, savory sauces. I'm already hungry just thinking about it, and I'll be making it this week for my family. I hope you do too! | | | | | | Lemony Linguine with Olives and Feta | One reviewer said "This recipe was delicious—a perfect summer night dinner on the porch!" I couldn't agree more. This plate of pasta is bright, citrusy, and comes together in about 25 minutes. Dust each plate with extra lemon zest for additional zing. For more protein, top the pasta with sautéed shrimp or grilled chicken. | | | | | | Jerk Pork Burgers with Pineapple | Big flavor alert! First, the patties are enhanced with scallions and jerk seasoning. Next, a quick sauce gets brushed onto the burgers after they're cooked and then spooned on top for extra flavor. Finally, a round of grilled pineapple balances out the spice and provides an irresistible smoky sweetness. | | | | | Italian Baked Eggs with Tomato Sauce | Breakfast for dinner is a win anytime of year, but especially in the summer when a lighter meal feels just right. Here, you nestle eggs into a turkey sausage-spiked tomato sauce and bake just until the whites are set. Cheesy toasts for dipping are the finishing touch. | | | | | | Greek Salad with Chicken and Feta "Croutons" | I'm here for the chicken, greens, cucumber, and tomatoes, of course. But, it's the crisp, golden cubes of feta that make this meal a stand-out. The easy dressing is fab too: a mixture of tahini, oil, vinegar, honey, and Greek herbs. You can make the dressing up to a week ahead. | | | | | | Japanese Pancake | If you've never tasted a Japanese cabbage pancake, also known as okonomiyaki, then you're in for a crispy, crunchy, savory treat. Essentially a mixture of eggs, cabbage, and flour, it's reminiscent of both a frittata and a potato pancake. It's also an exceptional clean-out-the-fridge recipe. Swap in grated carrots for some of the cabbage or fold other vegetables like finely chopped cooked broccoli or sliced cooked mushrooms into the batter. | | | | | | Lemonade Concentrate | I recently updated this classic recipe with several variation ideas, and it inspired me to put up a batch of this concentrate in my freezer. The basic technique couldn't be easier: boil sugar and water to make a simple syrup and then stir in lemon juice. Whenever you're ready for a refreshing beverage, just combine an equal amount of concentrate and water. | | | | | | |
